RIB COOK OFF SIGN UP 2024

ENTRY FEE:  $100

**THIS YEAR WE ARE COOKING PORK RIBS ONLY!!**

**MUST BE ON THE BONE**

    1. The Rib Cook-Off will be out front of the beer gardens on the UMV fairgrounds.
    2. No outside beer, wine or liquor products will be allowed on the fairgrounds or the cook-off.
    3. Each team is allowed 4 official team members
      You can have as many assistants as you need. Each team will receive 4 door prize tickets.
    4. You will be required to supply your own grill, smoker etc., utensils and serving supplies.  Power is available if needed (LIMITED POWER AVAILABLE).  If you have any special requirements, let us know ahead of time.
    5. The cooking and prep time is 7 hours. (9am to 4pm).
    6. Each team must provide 50lbs of ribs (ON THE BONE)
    7. Side dish is optional, but must be prepared on site if you choose to provide one.
    8. The UMVF Board will provide each team with a container for judging and a blank copy of the judges score sheet. The judges are random and volunteer. The decision of the judges is FINAL.
    9. Public Tasting will be from 4pm-6pm. You are allowed to charge up to $5 for 2 ribs. Your team is responsible for charging and keeping track of the money. You are responsible for supply serving materials, plates and utensils.
    10. You are required to maintain cleanliness of your cooking space.
    11. Prior to cooking, the ribs must be maintained at 40° or less.
    12. After cooking, ribs must be at 145° or above.
    13. Each team can bring a door prize if desired. A side dish is optional, but must be prepared on site.

    SCHEDULE AS FOLLOWS:

     

    1. 7:00am – Begin set up and decorating
    2. 9:00am – Cooks meeting, you must have at least 1 team member in
      attendance
    3. 9:00am – Begin prep/cooking
    4. 3:30-4:15pm – Turn in your container for judging
    5. 4pm – Open to public
    6. 6pm – Closed to Public, Winners will be announced
    7. 6:15pm-7:00pm – Clean up and removal of booths

**We ask that each team consider donating a door prize if possible.  We will have Rock-Paper-Scissors Tournament and Yard Games going all day!
